Last week I found a recipe for Carob Truffles at carolynn's recipe box. You can view her recipe here. The only "flour" in the recipe is ground flax seed, which is one of my newest obsessions. I love that stuff! So of course I decided to make her truffles with a few adaptations.
1/4 cup ground flax
1/4 cup cocoa powder
1/3 cup honey (I use raw organic honey which is so healthy)
1/3 cup chopped walnuts
1/3 cup all natural peanut butter
1 tsp pure vanilla
coconut flakes
Simply place all ingredients into a food processor and mix until it comes together into a ball. Then roll into tiny bite-sized balls and roll in coconut.
Now if this isn't a healthy chocolately treat then I don't know what is! Thanks Carolynn!
